Preparation:

  1. Prepare the Idli Batter:
    • Soak the idli rice and urad dal separately. Drain, then blend them into a smooth batter with water. Ferment the batter overnight in a warm place.
  2. Prepare the Sambhar:
    • In a pot, combine cooked toor dal, mixed vegetables, sambhar powder, tamarind paste, and salt. Add enough water to reach desired consistency. Cook until the vegetables are tender.
    • In a separate pan, heat oil. Add mustard seeds, cumin seeds, asafoetida, and curry leaves. Once they splutter, pour this tempering over the sambhar and stir well.
  3. Cook the Idlis:
    • Grease the idli steaming trays and pour the batter into the molds. Steam in an idli cooker or a steamer for about 10-15 minutes or until a toothpick inserted comes out clean.
