Description
Idli with Sambhar is a classic South Indian dish that is loved for its soft, fluffy rice cakes (idlis) paired with a spicy and tangy lentil stew (sambhar). This wholesome combination is not only nutritious but also offers a delightful balance of flavors and textures. Idlis are steamed to perfection, making them light and airy, while sambhar is rich in protein and packed with vegetables, making it a wholesome meal that can be enjoyed for breakfast, lunch, or dinner.
Preparation:
- Prepare the Idli Batter:
- Soak the idli rice and urad dal separately. Drain, then blend them into a smooth batter with water. Ferment the batter overnight in a warm place.
- Prepare the Sambhar:
- In a pot, combine cooked toor dal, mixed vegetables, sambhar powder, tamarind paste, and salt. Add enough water to reach desired consistency. Cook until the vegetables are tender.
- In a separate pan, heat oil. Add mustard seeds, cumin seeds, asafoetida, and curry leaves. Once they splutter, pour this tempering over the sambhar and stir well.
- Cook the Idlis:
- Grease the idli steaming trays and pour the batter into the molds. Steam in an idli cooker or a steamer for about 10-15 minutes or until a toothpick inserted comes out clean.
